Our
Story

For nearly a century, our family has cultivated olives on the shores of Lake Trasimeno. Every drop of our oil carries the story of this land: its centuries-old trees, its microclimate, and the hands that tend them.

Fattoria Luca Palombaro sits at the entrance of Monte del Lago, on hills rich in olive groves of Frantoio, Leccino, Moraiolo and the native Dolce Agogia, a variety that thrives only here, on the shores of the lake.

1927

A choice of land

In the early 1900s, Ottavio Palombaro founded the Azienda Boschiva Ottavio Palombaro e figli, which within two decades became Italy's most important national forestry company and official supplier of railway sleepers to the Italian state. Of Umbrian origin, in 1927 Ottavio sent his son Giovanni to Lake Trasimeno to find a place to invest. Giovanni fell in love with Monte del Lago and bought the villa, the estate, and the oil mill from Riccardo Schnabl.

1930

Giovanni's stewardship

Alongside the family's forestry company, Giovanni managed and deeply loved Monte del Lago. When electricity reached the villa in 1930, he extended it to all 23 surrounding farmsteads, dug new wells, and equipped the estate with the most modern machinery of the time, improving the lives of the families who worked the land. The Azienda Agricola Giovanni Palombaro went on to win numerous awards from the Ministry of Agriculture.

Today

Tradition kept

Today, Luca Palombaro, Giovanni's grandson, oversees the estate and tends to its bond with tradition. New technologies allow the production of an oil with prized organoleptic qualities, but memory and the safeguarding of tradition remain the guiding reference.

Harvest

Olives harvested in October, in small batches, at the precise moment of ripeness.

Cold Press

Pressed within hours of harvest. Temperature never exceeds 27°C to preserve the polyphenol content.

Storage

Held in stainless steel barrels to prevent oxidation and preserve freshness.

Bottling

Bottled directly on the estate, both by hand and with mechanical systems.

Our first
truffle grove

A new chapter for the estate: alongside our olive groves, we have planted our very first truffle grove. A small step, taken with the same patience the olive trees have taught us — the first harvest will come in its own time.

We are 3 lifelong friends traveling through Italy and this was a great experience. Francesco gave a brief history on how olive oil was once produced at the mill. The large terracotta jugs that were once used to store oil are spectacular! We then made ravioli and cantucci. Delicious!! We had a lovely lunch with bruschetta, wine, ravioli and cantucci. Two thumbs up from everyone in our family! It was both informational and fun for the whole family. The tour of the olive oil mill was interesting and they had an amazing collection of old terracotta pots that used to hold oil. We all learned how to make ravioli from scratch and how good food can be made from simple ingredients. Our host was so lovely and patient. If you are in the area, this was a great experience!
